Ingrédients

  • 400 g Olives pitted green olives
  • 1 whole Chicken cut into pieces
  • 2 Onion sliced
  • 5 cloves Garlic whole and minced
  • 4 tbsp Coriander freshly chopped
  • 2 Preserved Lemons cut into quarters
  • 1 tsp Spices ginger, cumin, turmeric
  • 3 tbsp Olive Oil or Argan oil
  • 200 ml Water for simmering
  • to taste Salt
  • to taste Pepper

Instructions

  • In a tagine or a large pot, heat olive oil over medium heat. Sauté the onions and minced garlic until fragrant and softened.
  • Season the chicken pieces with salt and pepper, then add them to the pot to brown for about 5 to 10 minutes.
  • Add the spices (ginger, turmeric, cumin), lemon juice, water, and the remaining garlic cloves. Stir well.
  • Cover the tajine or pot and place it in the oven at 150°C for 1 hour.
  • Remove from the oven, then add the olives, preserved lemons, and coriander. Stir gently.
  • Return the dish to the oven for another 30 minutes at 150°C.
  • Serve the tajine hot with steamed couscous or boiled potatoes.

Notes

This dish pairs wonderfully with couscous or potatoes. Feel free to adjust the spices to your preference!
